Ok i need a little advice. I've seen some rims i would like but need to know if they would be ok. What ET would i need if i was running a 7.5" wide rim and 16" big on both the front and back of my GTI?

Regular Lupo GTI wheels either 15s or 16s ET 35 is suggested. I think ET 32 would do the job as well.

they only come in ET20? what will that mean for appearance?

I means your wheels will stick out of the arches by about 10mm at the front.

Would that matter with 195 wide tyres on a 7.5 rim?

No, the rim sticking out is the rim sticking out. Putting a 195 would mean the tyre will be about level with the arch, good for taking chunks out of your tyre, but not much else.

IMO (and it is just that) yes, it will look a little daft. As there 16s I like to see a small tuck.

Someone on here has 7.5x15's with et25 with little rubbing.

So 7.5x16" et20 should work with more rubbing or setting your coilovers at really stiff setting.
