You dont say what lupo you are converting, but easiest way to have rear disks is with a 1.4 sport beam and brakes, GTI have wider track and it isnt a straight swap afaik. (i am a Lupo noob).

Gearbox is sealed unit oil wont come out as the drive shaft flanges stay in place. (i assume that's what you meant)

Assuming you have an 085 box.

Hex bolt in the centre of the drive shaft flange, you need a good quality hex socket for that and put two drive shaft bolts back in the flange so you can hold it with a bar while you undo the hex bolt.

Oil will pour out unless you have drained it obviously. The fill and drain plugs can be stupidly tight so you need a good 17mm hex socket for that, pref chrome molybdenum grade and a long breaker bar, if attempting this with the gearbox off, it may require some ingenuity and a blow torch. You may be lucky and they have been opened recently in which case be thankful. Important point: do not drain the oil until you have freed off the fill plug for obvious reasons.

Drive flange is spring loaded and will pop out. there's a brass ring in there, dont lose it and if it's in bits then you need a new one (£7).

The seal is on there good and will need some leverage to get off. if you have access then you can probably start it moving with a hammer and drift.

I have not replaced a seal myself yet, but did have small go at removing one last week to see if it moved easy or not and it wasnt budging, so will need some good levers under it I would think. If you are fitting a new one then it isnt so important not to damage it.

Make sure it is clean before removing it it as you dont want grit getting in the diff bearings.

Clean the hole and seal seat before fitting the new one and tap it in with a suitable size drift that wont damage the lip seal, oiling the seal first might help ease it in. Make sure it is not at and angle as it enters the hole and tap it in evenly.

Oil the seal lip before putting the drive flange back in and make sure the flange is clean.

Edit to add: drive flanges are different so either do one at a time or make sure you know which side is which.
